Zucchini with a Protein Punch

There really isn’t too many options when it comes to muffins–actually there aren’t any options EXCEPT when they have a protein punch. I came up with these Zucchini muffins after making “protein” pancakes every morning. I really wanted to try something more exciting, and since fruit hasn’t been a staple in my diet for the last 6 weeks I threw in a little shredded Zucchini. The recipe below makes 5/6 muffins and you get to eat ALL of THEM!!!

Ingredients:

   1/2 Cup of Oatmeal

1 Cup of Egg Whites

1 tsp of Baking Powder

1 tsp of Baking Soda

8 Stevia Packets

1 tsp of vanilla

1 tbsp of cinnamon

1/2 Zucchini

Non-stick cooking spray

Muffin Tin

Directions:

Pre-heat oven to 350 Degrees F

 

 

 

 

 

 

 

Pour all ingredients EXCEPT ZUCCHINI into a blender (I use a magic bullet)

 

 

 

 

 

 

 

 

Blend until oats are fine and everything is mixed

 

 

 

 

 

 

 

 

Shred a half of a Zucchini (should equal a little less than a cup)

 

 

 

 

 

 

 

Mix the Zucchini and the wet ingredients in a bowl

 

 

 

 

 

 

 

Spray non-stick cooking spray in muffin tin. Pour mixture into muffin tin.

 

 

 

 

 

 

 

 

Cook for 25 minutes or until baked through.

Practice…Practice…Practice

Every Girl Deserves Chocolate on Valentines

No, I didn’t cheat! Although with how good these chocolate egg souffle’ were, I would have sworn I had been cheating. I came up with this idea after I surprised Brendan with a triple chocolate cake from Cheesecake Factory, only to have to sit and watch him eat every last bite. It was torture! I looked at him in anguish, constantly repeating “Cheesecake Factory isn’t going anywhere…Cheesecake Factory isn’t going anywhere…I can have some cake after May 6!” Once he shoveled the last piece into his mouth I was finally set at ease. The pain of watching each morsel of rich chocolate slide down his throat was excruciating. This is why I came up with my own Chocolate Dessert.

Packed with 25 grams of protein, and a few tablespoons of unsweetened cocoa, I was more than satisfied on my Valentines Day

Chocolate Egg Souffle’

   Ingredients

1 cup of egg whites

2.5 tablespoons of unsweetened cocoa

1 tsp baking powder

6 Truvia packets

Cupcake Pan

Directions

1. Pre-heat oven to 350 Degrees F.

2. Mix Egg Whites until soft peaks form

3. Slowly add in all dry ingredients

4. Spray pan with non-stick cooking spray and separate mixture into cupcake pan (usually fills up 5 cupcake holders, 3/4 of the way up)

5. Cook for 20 minutes

6. Let cool and eat ALL of THEM!!

(There are 5 chocolate egg souffles and, yes, you get to eat all of them!)

Kale Chips

These days I’m always looking for a new twist on a recipe or type of food I enjoy, and I finally came across one with a CRUNCH! Kale—a vegetable that you wouldn’t usually find in my daily diet has made its way into my fridge, and straight into my oven. With an inspiration from veggie straws, I’ve been looking for vegetables that I could dehydrate to create the perfect crunchy snack. It was hard to not grab a chip or two on Super Bowl Sunday, or get my own box of popcorn at the movies, but now I can finally lay to rest, because with such a great nutritional profile, you can’t feel guilty with these chips.

Kale Chips

Ingredients:

A bunch of de-ribbed Kale

Fat Free Olive Oil Cooking Spray

Mrs Dash Table Blend (other spices or sea salt work perfectly too!)

 

Directions:

1. Preheat the oven to 275 Degrees F. Spray a cookie sheet with Fat Free Olive Oil Cooking Spray or Pam.

2. With a knife (I used my fingers) remove leaves from stems and tear into bite size pieces. Wash and dry thoroughly.

3. Lay Kale on the cookie sheet and lightly spray Fat Free Olive Oil Cooking Spray on top. Sprinkle Mrs Dash Table Blend.

4. Pop tray into the oven for about 20 minutes.

5. Enjoy each CRUNCH!

 

 

 

Strike A Pose

This morning I convinced my friend Alex to drive with me to Springfield, Massachusetts for a posing clinic. With my boyfriend gone at an ROTC event, I needed some company for the hour and a half drive, and let’s just say an hour and a half is a LONG drive for me. We got there pretty quickly and I spent the morning practicing T-walks, poses, and getting my shoulder to pop…Take a look!

Apparently even Alex enjoyed it too—all he remembers is “Now stick your butt out, arch your back, flick your hair, and look at Alex and smile.” (I think he enjoyed himself a little too much.)
